Bake a Cake for an Unpaid Carer
We are encouraging everyone to let anyone they know who is looking after a friend or family member about the events taking place in Carers Week. We’re also asking residents to show unpaid carers support and appreciation by baking them a cake for the coming Thursdays in May.
It’s well known that health and social care workers have been completely stretched over the pandemic, but it’s less well advertised how great the impact has been on those who are providing unpaid care to friends or family on a regular basis. We hope you will join us in celebrating unpaid carers by baking a cake. Islington carers and ICH staff will be sharing a recipe each week!

Week 1 – Victoria Sponge

Week 2 – Blueberry Muffins (Gluten Free)

Many people are eating gluten free these days, whether it’s a dietary requirement or not. I simply wanted to try something different. I’ve not had any complaints from anyone who’s tasted them so far – even a friend who doesn’t like nuts! They’re also super quick to make – 30 minutes including baking time. Here’s the recipe.
Week 3 – Carrot Cake Muffins

It’s always lovely to have a cake to offer visiting family or to take round to a kind neighbour or friend as a gift. This carrot cake is quite easy to make. It stays nice and moist and will keep for about a week in an airtight container, that is if you can resist eating them as soon as you’ve iced them! Here’s the recipe.
